Vegetable Cutlet



Things Required :

Boiled Mashed Potatoes : 4 nos medium size
Finely chopped carrots : 2 nos
Beans : 1/4 cup well chopped
Peas : 1/4 Cup
Corn : 1/4 cup
Cashews : 6 nos
Cilantro

Method :

First mash the boiled potatoes and cook the beans,peas and corn. Mash all the vegetables well. Don't make the mixture too soggy. Add some bread crumbs to remove excess liquid from this misture.

In a separate saute pan,Take little oil and allow jeera seeds to splutter and saute carrots, cashew, cilanro leaves and once they are done, add this cooked mixture.

Mix well and add a spoon of Garam masala, chilli powder and mix them well for some time in low heat

Turn off the heat and allow the mixture to cool down.

Make them into small patties and dip them into a maida paste (just mix little all purpose flour and water and make it like a semi solid or paste like thing. Do not make it watery)

After dipping it in maida paste dip the patty in bread crumbs (store bought gives better results)

Dipping the patty in maida paste ensure that the bread crumbs sticks well to the patty.

Now just fry them well in oil. You can bake them too but I prefer the taste from frying in little oil.
