Idly and Dosa

Hi Everybody, I am sure there cannot be a single south Indian who does not like Idly or Dosa. Idly , Dosa and Pongal are all time favorites for all South Indians. There are so many varieties of Idly and Dosa but here I would like to mention what my amma prepares at home. She normally refers Idly to a jasmine and says that it should be as soft as a Jasmine.

Here are the tips to make Idly batter :

  • For Idly : Take 3 cups of Idly rice and 1 cup of Urad dal and soak them in water atleast for 4 hours. It is always better to soak them in Ice water. Even while grinding add ice water to the batter and grind. Always grind the urad dal first and then grind the Idly rice. It is also good to add vendayam (fenugreek seeds) to the batter while grinding (Do soak them in water along with idly rice and Urad dal) It gives a better taste.
  • For Dosa it is better we take 4 cups of Idly rice and 1 cup of Urad Dal

Idly and Dosa go well with Coconut Chutney rite !!

For Coconu chutney - take fresh shreded coconut . DO NOT take th BROWN skin from the coconut while grinding chutney. It not only spoils the colour of Chutney but also increases the cholestrol

For fresh Coconut chutney : Grind Fresh coconut, a small piece of green chilli and little salt to taste . After grinding add a pinch of curd or lemon. It tastes great.

Always eat coconut only for breakfast or lunch and not for dinner as it might add a few pounds to if you take it for dinner :)
